Products:
1,2 - 1,6 kg of a mixture of cereals and legumes (beans, lentil, chickpea,
wheat, rice in an equal volume)
4 legs of lamb
500 g of mutton with bones
3-4 onions
leaves of cilantro, basil, savory, 1 tsp red pepper, 5-6 bay leaves

Process:
Rinse each of legumes and cereals separately and soak them for 30-40 minutes
in the water. Then rince them again add water, boil and pour off the first
broth, as soon as the mixture boils. After all of this pour 4 litre of
water, add lambs legs and meat, and cook on low heat.
After one hour add onions, 1/3 of bay leaves, fifth part of leaves of
cilantro, basil, savory and cook them on very low heat 5 more hours. Add the
all rest herbs and spices 10-15 minutes before the food will be ready,
except red pepper, which you have to add on the last moment.
When all this job is done, brew soup for another 10 minutes.

Products:

160 gr of wheat flour
1-4 pieces of egg
80 gr of water
15 gr of vegetable oil
125 gr of mutton
40 gr of onion
15 gr of fat
black powder pepper
Salt

Process:

Make a dough from combination of flour, eggs , salt and water. Let it stand
for 30-40 minutes.
Then roll it into large leaves with thickness 1 mm. And then oil it and
twist it like rolls, when you done it cut rolls in small slices and then
roll it out again. Put the mince into rolled dough. Give it form of
crescent. Bake "Sambusa" in oven.

For mince:
- get the mutton through mincer, fry it on the fat with small cutted pieces
of onion, add black powdered pepper and salt.

Products:
1 kg Rice
800 g - 1 kg of Carrot
1 - 2 pieces of Onions
200 g of Oil
500 g - 1 kg of Meat

Process:

1. Fry the onions in oil until they take yellow color
2. Put the meat
3. Wait while the onions get a brown color
4. Put carrots. Wait until they get soft.
5. Put salt, how much you like.
6. Put the water; it has to be about 600-700 g. Keep it boiling about 30-40
minutes on a slow fire.
7. At the same time, wash rice in a cold water 4-5 times.
8. Soak rice in the warm water.
9. Put rice evenly in the vessel
10. Pour the boiling water in the vessel.
11. Make the fire bigger for more intensive boiling of water
12. Check whether the salt is enough.
13. Make fire slowly, when you can't see water on the surface of rice.
14. Pick rice
15. Cover rice with a big plate or with a bowl. The down of the plate has to
be with a no big bottom. It helps for circulation of hot air.

After 15-30 minutes the food is ready.

Products:

1. 4-5 pieces of potatoes

3. Half piece of cabbage
4. 1 turnip
5. Laurel
6. 0,5 - 1 kg of meat
7. 2-3 pieces of onions
8. 100-200 gr. of Oil
9. 1 tomato
10. 200 gr of water

Process:

1. Put the meat into the casserole.
2. Put cabbage, which was cut onto 4-5 pieces, on the surface of meat.
3. Then put onions, which were cut like rings.
4. Put salt, how much you like.
5. Put laurel.
6. Put tomato.
7. Pour Oil evenly.
8. Pour the water.
9. Smooth down with plate or lid.
10. After all of this operations, make a big fire.
14. When water will start to boiling, make fire slowly, and wait for 2
hours.
15. Check whether salt is enough.

The food is ready.

Finely chop meat and onions, mix well, and add salt and spices. Make stiff
dough out of flour, eggs, salt , and water, let stand for 10 min. Roll out
dough into flat layer about 1-2 mm (1/20 in.) and cut into 10x10 cm (4x4
in.) squares. Place a tablespoon of filling and a piece of chopped fat in
the center of each square, pinch edges up around the filling forming
rectangular or triangular dumplings. Place mantu on greased layer of
steamer, and steam 45 min. Serve in bowls, top sour cream and sprinkle with
freshly ground black pepper.

500 g or 3 3/4 cups flour, 1 kg mutton or beef, 100 g (3-4 oz.) mutton fat,
500 g (18 oz. ) onions, 1 egg, salt, black pepper.
